Mayo-Free Chickpea Salad Sandwich

Recipe:

Servings: 3-4 sandwiches

Cook time: 10 minutes

  • 1 can chickpeas drained and rinsed

  • 2-3 tbs hummus

  • Juice from 1/4 lemon

  • 2 sticks celery finely chopped

  • 5-6 cherry tomatoes chopped

  • 2-3 tbs chopped walnuts

  • 1/8 tsp garlic powder

  • 1/8 tsp onion powder

  • Salt and pepper to taste

  1. Mash chickpeas with a fork

  2. Mix all ingredients together, taste and adjust seasonings as needed

  3. Make sandwich with your fave bread!

I used to love chicken and tuna salad sandwiches before going vegan, I would even get them at Chick-fil-A. This recipe is a great healthier vegan alternative that is quick and easy to make! I always like packing sandwiches for lunch to take to school or work because you don't need utensils or a microwave to eat them. You could meal prep the chickpea salad and make the sandwich fresh for lunch everyday, which is what I used to do before covid! If you are looking for a quick and healthy lunch to take on the go, try this recipe out! You could totally replace the hummus with mayo if you want, but using hummus reduces the fat and calories a bit without taking away from flavor or texture!
