Easy Vegan Shephard's Pie

Recipe:

Servings: 6

Total time: 1 hour


For the filling:

  • 2-3 cups soy crumbles (can sub lentils or beans)

  • 2 tbs oil

  • 1 medium onion chopped

  • 2-4 gloves garlic minced

  • 2 tbs soy sauce

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • 1 tbs Italian seasoning

  • 1 cup vegetable broth

  • 2-3 cups frozen mixed veggies

For the mashed potatoes:

  • 2 large russet potatoes

  • 2 tbs plant-based butter

  • 1/2 cup plant milk

  • 1/2-1 tsp garlic powder

  • 1/2-1 tsp salt

  • 1/2 tsp black pepper

  • 1/2 cup vegan cheese for topping (optional)

  • chives for topping

  1. Puncture the potatoes with a fork a few times around and place one in the microwave for 5 minutes. Flip it and microwave it for 5 more minutes. Then do this for the second potato.

  2. While the potatoes are microwaving, chop the onion and heat the oil in a large skillet on medium heat. Add the onion and cook 3-4 minutes. Add the soy crumbles and seasonings and cook 3-4 more minutes. Then add the garlic and soy sauce and cook for 2 minutes. Finally add the broth and frozen veggies, stir, let the mixture come to a slight boil and simmer until veggies are warmed.

  3. Preheat the oven to 400°F.

  4. While the filling is simmering, slice the potatoes in half, remove the skins, and mash in a large bowl. Add the remaining ingredients and mix until smooth and creamy.

  5. Assemble the pie in a large casserole dish by first adding the soy/veggie mixture and smooth it evenly across the dish. Then spoon the mashed potatoes overtop and smooth it out. Sprinkle with cheese and bake for 30 minutes.

  6. Top with chives and enjoy!

I don't think I ever had Shephard's pie before I went vegan but it's such a good meal to make to feed a lot of people! This recipe makes at least 6 servings if your'e eating it as a main course or it could serve more people as a side dish. It is hearty, filling, and so delicious! It's basically mashed potatoes on steroids. This would be a great dish to make for any holiday or dinner party. I made the whole thing for myself so this is what I will be eating for the next week, call it "meal prep"! Comment down below if you try this recipe and what you did or would do differently!
