Healthy Vegan Blackberry Crumble

Recipe:

Serving size: 4

Cooking time: 25 minutes

  • 3 cups fresh blackberries

  • 1 cup oats

  • 2 tbs almond butter

  • 3 tbs agave or maple syrup divided

  • 1/4 cup chopped pecans

  • 1/4 tsp cinnamon

  1. Preheat oven to 350°

  2. Mix the oats, almond butter, 2 tbs agave, pecans, and cinnamon until well combined.

  3. Mix the remaining 1 tbs agave with the blackberries to coat.

  4. Distribute the blackberries evenly in a 9-inch pie pan or square pan.

  5. Evenly distribute the oat mixture over the blackberries.

  6. Bake for 20 minutes at 350°

  7. Serve with yogurt or ice cream for breakfast or dessert!


This recipe is gluten free, refined sugar free, and oil/butter free! The topping is basically just granola and it tastes amazing on its own! I bought some fresh blackberries as they were on sale at H-E-B last week and wanted to make a healthy dessert/breakfast with them so I created this recipe. I recommend serving this with yogurt or ice cream to make it even more deductible. If you prefer a sweeter treat, add more maple syrup to the blackberries, mine were still quite sour. This recipe is so quick and easy, all you have to do is mix and bake! Comment down below if you try it and what you did or would do differently :)
