Fluffy Protein Pancakes

Recipe:

Servings: 1

Total time: 10-15 minutes

  • 1/2 cup all purpose flour

  • 1 scoop vanilla protein powder (optional)

  • 1/2 cup plant milk

  • 1/4 cup applesauce (could sub 1/2 mashed banana)

  • 1 tsp baking powder

  • splash of vanilla

Toppings I used:

  • agave syrup

  • banana slices

  • chopped walnuts

  • cinnamon

  1. Whisk all ingredients together until smooth

  2. Heat a greased pan on medium heat and cook 1-2 minutes on each side. They will bubble around the sides but might not bubble in the middle so be careful not to overcook them.

  3. Top with desired toppings and enjoy!

Sometimes you crave some fluffy pancakes but you don't want to just eat a pile of carbs so you add some protein powder and call it healthy ;) But in all seriousness, the protein powder is optional and they would probably taste better without it. I like to add it because not only does it increase nutritional value but it also helps to keep me full and satiated for longer.
