Salted Caramel Banana Bread - Vegan, GF & Refined Sugar Free!

Total time: 1.5 hours


For the bread:

  • 2-3 ripe bananas

  • 2 flax eggs (2 tbs flax meal + 6 tbs water)

  • 1/2 cup nut butter (I used almond)

  • 1/2 cup pitted dates

  • 1/2 cup plant milk or water

  • 2 tsp vanilla

  • 3 cups oat flour (can sub regular flour)

  • 1/4 tsp salt

  • 1 tsp baking soda

  • 1/2-1 cup nut of choice (optional)

For the salted caramel topping:

  • 1/2 cup pitted dates

  • 1/2 cup plant milk

  • 1 tbs nut butter

  • 1/4 tsp sea salt

  • 1/2 tsp vanilla

  1. Preheat oven to 350°F.

  2. In a small bowl, make the flax eggs and set aside

  3. In a blender, combine the dates and milk and blend until smooth.

  4. In a large bowl mash the bananas. Add the nut butter, date sauce, flax eggs, and vanilla and stir to combine. Add the oat flour, salt, and baking soda and stir until well combined. Fold in the chopped nuts.

  5. Grease a loaf pan or cupcake pan and fill with the batter. Top with more banana slices if you'd like. Bake for 1 hour.

  6. While the loaf is baking, make the caramel sauce by blending all of the ingredients together until smooth. Drizzle over top of the loaf or muffins and enjoy!

When life gives you brown bananas, make banana bread. This recipe will have your kitchen smelling incredible. I haven't made banana bread almost a year because I honestly just haven't had the taste for it lately but adding the date caramel makes it seem like a whole different thing! This banana bread is a healthier alternative than regular banana bread, but you wouldn't even know the difference! The oats and nut butter provide whole grains, protein, and healthy fats and the dates are an all-natural sweetener! The caramel sauce may not seem very appetizing but don't knock it before you try it, it tastes amazing! It would be a great dip for fruit all on its own.
