Healthy Tofu Fried Rice

Recipe:

Servings: 3-4

Prep time: 20 min

Cook time: 20-25 min


For the Tofu:

1 block extra firm tofu

1-2 tsp sesame oil (or any oil)

1/2 tsp garlic powder

1/2 tsp onion powder

1 tbs nutritional yeast (optional)

some salt

For the rice:

1 cup rice

2 cups water

2 tbs soy sauce

For the veggies:

1-2 tbs vegetable oil or vegan butter

2-3 cloves minced garlic

veggies of choice (fresh, frozen, or canned)

  1. Cook the rice according to directions but add soy sauce to the water.

  2. Press the tofu for 10 or so minutes and dice into small cubes. Add oil and seasonings and stir to coat. Bake or air fry at 400°F for 20-25 minutes.

  3. Heat oil or butter in a large pan on medium heat. Add garlic and cook for about 1 minute. Add veggies and cook until soft.

  4. Add the rice to the veggies and cook for a few minutes. Then add the tofu and stir to combine.

  5. Taste and add more soy sauce, seasonings, or oil/butter if needed. Top with green onions and sriracha if you want and enjoy!


I used to love fried rice but I haven't ordered it in years because I always thought it was too unhealthy. And maybe it is unhealthy at restaurants but when you make it yourself, you can choose how much or how little oil/butter to use. Using more is obviously gonna increase fat and calories but using less will give you that same taste and feeling but without the greasiness. This meal is super simple and easy to make, I think it should be a stable for everyone. Best of all, the ingredients are affordable and accessible. For the veggies I used a bag of frozen veggies and 1 can of diced veggies. The can was going to expire in a few months and I never really eat canned vegetables but I figured why not throw it in there. Canned vegetables may not have the same nutrients as fresh or frozen but I still think they are worth including. Using frozen and canned vegetables sure does save tons of time on cleaning and chopping! Comment down below if you try this recipe and what you did or would do differently!
