Recipe:
Servings: 2
Cook time: 20 minutes

1 cup black beans drained and rinsed
1 cup of oats (quick or rolled)
1 flax egg (1 tbs flax meal + 3 tbs water)
1/2 small onion quartered
splash of soy sauce (about 1 tbs)
1-2 tsp barbecue seasoning or the following:
1/4 tsp garlic
1/4 tsp paprika
1/4 tsp chipotle powder
salt & pepper to taste
1 tbs oil or cooking spray
2-3 burger buns (depending on how big you make the patties)
Toppings ideas:
Lettuce
Tomatoes
Pickles
Avocado
Vegan mayo
Hummus
Make flax egg by mixing the flax meal and water and set aside.
Add the remaining ingredients into a blender or food processor and pulse as much as it will let you.
Add the flex egg and process/blend until well combined.
Taste adjust seasonings as needed.
Form patties. If the mixture is too sticky, put it in the freezer for a few minutes.
Heat 1 tbs oil or cooking spray in a pan on medium heat.
Cook patties until browned on each side, about 5 or so minutes each side.
Assemble burgers and enjoy!

Since I'm taking mostly online classes this semester, thanks to covid, I've been able to mix up my lunches more and try new recipes. I like quick recipes for lunch because I don't want to spend too much time during the day cooking, and this recipe is actually really quick to whip up and was surprisingly delicious! I haven't made my own veggie burgers in about 3 years because it's easier to just heat up pre-made frozen ones, but this recipe is almost as easy and a lot more healthy! I thought that these burgers had good flavor and were pretty firm. They cooked really nicely on the stove. I used a barbecue seasoning called Butt Rub to season my patties, but the spices listed in the recipe are about the same as the butt rub.
