Recipe:

Servings: 15 taquitos
Prep time: 20 minutes
Cook time: 30 minutes
For the taquitos:
1 15 oz can black beans drained and rinsed
1/2 tsp garlic powder
1/2 tsp cayenne (optional)
1/2 tsp cumin
1/2 cup salsa
2 tbs tahini
1/2 cup shredded vegan cheese
1/4 cup green onions chopped
Salt to taste
15 corn tortillas
1 tbs oil for brushing (optional).
For the sauce:
1 medium avocado
1/4 cup cilantro
1-2 tbs green onion chopped
1/4 tsp garlic powder (or more)
Salt and pepper to taste
1/4 cup water (may need more)
Preheat oven to 350°
In a food processor or blender, blend the black beans, spices, and tahini. You may want to pulse it for a chunkier texture. Then mix in the salsa, cheese, and green onions with the bean mixture. Taste and adjust seasonings as needed.
Heat 5 tortillas in the microwave for 1 minute. Add 1-2 tbs of bean mixture to one side of a tortilla and then roll it tightly. Place fold side down in a greased baking dish. Repeat for each tortilla. I found that heating 5 at a time worked best.
Brush the taquitos with oil to make them crisp if you'd like and bake for about 30 minutes. I baked mine at 425 for 20 minutes and the tortillas broke open so I think baking at a lower temp for longer is the way to go.
Make the sauce by blending everything in a blender or food processor until smooth. Taste and adjust seasonings as needed.
Serve taquitos with the sauce and enjoy!
So my taquitos did not turn out as pretty as I wanted but they were still delicious! I baked mine at 425°F for 20 minutes and I think that the temperature was too high which caused them to crack. So I put in the recipe to bake them at 350°F for 30 minutes instead. I was pleasantly surprised with how they tasted, they're great even without any sauce! My non-vegan boyfriend liked them a lot so I think this is something that everybody would enjoy. These taquitos would make a great appetizer or party food for Christmas or any occasion! The green sauce makes it seem a little christmasy at least. This recipe is super quick and easy and makes a good amount of taquitos. The spices are totally adjustable to your preferences. I added the tahini to make the filling a little bit creamier and I really liked the flavor that it added. You could even do 1/4 cup tahini if you wanted. Or omit it if you don't like or don't have tahini. These taquitos made a great study snack/meal for me with finals being this week!
