Vegan & GF Pumpkin Spice Oat Cookies

Recipe:

Servings: 8 cookies

Total time: 20 minutes


For the cookie:

  • 1+1/4 cups oat flour (finely ground oats)

  • 1/2 tsp salt

  • 1/4 tsp baking soda

  • 1 tsp pumpkin spice

  • 1/2 cup + 2 tbs pumpkin puree

  • 2 tbs almond butter

  • 2 tbs granulated sugar

  • 2 tbs brown sugar

  • 2 tbs chopped pecans (optional)

For the icing (optional):

  • 1/2 cup powdered sugar

  • 1 tbs pumpkin puree

  • splash of milk

  • pumpkin spice to taste

  1. Preheat oven to 350°F

  2. Mix the oat flour, salt, baking soda, and pumpkin spice to combine.

  3. In a separate medium sized bowl, whisk the pumpkin puree, white and brown sugar, and vanilla.

  4. Gradually add the flour mixture to the wet mixture and mix until well combined. This should make a thick cookie dough consistency. If the dough seems too runny, add some more oat flour, and if it is too dry, add some more applesauce. Only add about 1 tbs at a time until the desired consistency.

  5. Fold in the walnuts.

  6. Form 1-inch thick balls and flatten them because the cookies won't spread on their own. Place cookies on a greased baking pan.

  7. Bake for 10-12 minutes.

  8. While the cookies are baking, make the icing by whisking all the ingredients together.

  9. Let cookies cool before icing. Enjoy!



It's officially fall so of course I had to make a pumpkin spice cookie. I've never been a big fan of pumpkin pie but I do enjoy some pumpkin flavored treats. These cookies are so soft, chewy, and sweet! If you prefer less sweet things, leave off the icing. The pecans are optional but I love the extra flavor and crunch that they bring to these cookies!
